A Peasant’s Feast: Nourishing Food on a Budget
I am so excited about something I just found out about and I couldn’t wait to blog about it. Kimberly “Kimi” Harris (Joshua Harris’ sister-in-law) is teaching an e-course called, “A Peasant’s Feast: Nourishing Food on a Budget.” Kimi has had to learn how to make her family healthy food while on a budget as her husband Joel is in Bible School (I can relate) right now and then hoping to attend seminary.
Kimi has created an extensive 13-week e-course which will be starting on June 28th, Don’t let the date of the class be something that makes you not take it! Here is an excerpt from her Q.A. section,
“I will post the lesson for the week at the beginning of the week, and then you are welcome to view the video(s), lectures, and recipe notes whenever you want! It’s very self-paced. If you get behind a week or two, no problem. You can catch up as you can. You will have access to all of the material until the end of the year.”
Here is what she writes about the actual course: In a nutshell, this class will have two purposes. First, to share the basic principles of a nourishing, healthy diet, second, to share how I do that on a budget. I’ve found that many people desire to eat well, but feel they can only eat well on a rich man’s budget. This e-class is all about showing how we can eat well on a reasonable budget. This is a thirteen week class (a baker’s dozen) discussing extensively what to shop for, how to save, and how to cook. We will be discussing what to buy and how to save on poultry, beef, and seafood. I will be teaching how to sprout, soak grains, and how to make sourdough bread and homemade yogurt. I will teach the students how to stretch one pound of beef into a meal for many, how to stretch one single chicken into several meals, and how to stretch high quality seafood. They will learn how to make their own salad dressings, how to lacto-ferment vegetables, the benefits of making your own chicken broth, and how to menu plan. By the end, students should have a firm foundation of what to shop for, where to find good local food, and how to prepare it. Another important part of the e-course is the forum where people have the ability to both discuss with each other that week’s topic, and also interact with me and ask questions. This gives me the opportunity to help trouble shoot any issues they are having.
I was blessed growing up in a home where my mom taught me to cook food from scratch, make food stretch, cook with the available ingredients, and make healthy meals at low cost. I've been asked multiple times how to do this and in my mind I thought, "move-in with my mom." The thought has even crossed my mind to do a course like this. I am excited that Kimi seems to have already done this and I am excited she has. I have looked at some of her recipes and at the preview for the class and it appears as though she is way more qualified to teach how to make healthy foods than I am. One of the questions I frequently get is, "Coupons are only for unhealthy over processed food how to I save money on my grocery budget and feed my family healthy food?" Welp! Hopefully this course can give you the foundations to know how to do this. Please check out her site for more information. The cost of the 13-week e-course is $120 and in order to help with budgeting she also offers a payment plan broken into three monthly $40 payments.

When Jacob went back to school full-time I decided to get him a lunchbox to take with him. I figured the purchase would be good for our now very tight budget and is health. I went to Walmart an purchased a green lunch bag. It turned out to be very inconvenient lunch bag. So, I started searching for a lunch bag that would work. The Cooler Bag
